Distilled in August 2005 and drawn from a single Pedro Ximénez sherry hogshead, this 20-year-old single cask bottling (Cask No. 5391) is limited to just 353 bottles, filled in September 2025. It’s the kind of release that defines Billy Walker’s legacy — rich, bold, and unapologetically indulgent.
On the nose, expect rich chocolate, spiced orange, honeycomb, and hazelnuts, deepened by muscovado sugar, salted caramel, crystallised ginger, and a wisp of tobacco. The palate follows with baking spices, heather honey, mocha, dried plums, and dark brown sugar, layering sweetness, depth, and warmth in perfect balance.
