GlenAllachie’s 30 Year Old is the top of the range and the bottle Billy Walker’s reputation rests on. Batch 4 was drawn from just five casks pulled from the distillery’s oldest, deepest stocks — three Pedro Ximénez and two Oloroso, hand-selected from an inventory most distilleries would kill for. Vintage sherry puncheons and hogsheads, married together and bottled without compromise.
Cask strength at 49.1%. Natural colour. Non-chill filtered. Nothing added, nothing stripped out. Antique Speyside single malt exactly as it came out of the wood.
Thirty years of slow sherry maturation gives you dark chocolate, honeycomb and raisin butter on the nose, with muscovado sugar, plum syrup and glazed almonds sitting underneath. The palate is rich cocoa, heather honey and chocolate raisins, then baking spice and molasses rolling into Black Forest gâteau, grape must and orchard fruit. Deep, dense and layered — a big whisky that never turns heavy.
Batch 4 is long gone from retail. There are 99 tickets. Do the maths.
