This is GlenAllachie doing what GlenAllachie does best. Since Billy Walker and his team took the reins of the Speyside distillery in 2017, it’s built a reputation as one of the most sherry-obsessed names in Scotch — and the Masters Of Wood Collection is where that obsession really shows. The name isn’t just marketing. These are solera casks, part of the great Spanish ageing tradition where old and young sherries are married across generations in the same wood. By the time this whisky went in, the casks had been holding PX and Oloroso for more than 55 years. Half a century of sherry soaked into the oak before a drop of spirit ever touched it.
The result is exactly what you’d hope. On the nose, brandied plum and treacle tart lead into dark mocha, honeycomb and cocoa, with molasses and polished old oak sitting underneath. The palate is thick and indulgent — plum syrup and heather honey up front, then black cherry, crystallised ginger, warm cinnamon and more of that mocha richness. The age of those solera casks shows in the darker, oxidative side too: walnut, leather and dried fruit woven beneath the sweeter sherried core. It finishes long and warming, all cocoa, gingerbread, spiced orchard fruit and a last lick of treacle.
Dark, dense and gloriously old-school. If you love a proper sherry monster, this is about as good as it gets.
