Mizunara is one of the rarest cask types in whisky. A Japanese oak that grows twisted, leaks during maturation, costs a fortune to source and is almost impossible to cooper properly. Most distilleries won’t touch it. Billy Walker – 52 years in the game – isn’t most distillers. He paired these notoriously difficult Mizunara barrels with rich Oloroso sherry puncheons and hogsheads, and the result is the first single malt in GlenAllachie’s new Masters of Wood series. That’s a statement of intent.
What Mizunara lacks in tannin it makes up for in vanilla and sandalwood character. Combine that with the nutty, dried fruit depth of Oloroso sherry casks and you get something genuinely unlike anything else on the market right now.
Heather honey, dried orange peel and crystallised ginger on the nose, with cocoa, toasted tobacco and fresh vanilla pods underneath. On the palate – baking spices, dried blood orange, grilled honeycomb, then waves of rich cocoa, poached cinnamon apples, fig syrup, pecans and demerara sugar. Intense mahogany colour. Long, indulgent finish.
