When America’s most famous spirits critic F. Paul Pacult tasted this whisky, he called it the greatest distilled spirit of his generation and told his readers to buy whatever they could find. It comes from Scotland’s northernmost distillery, perched in Kirkwall on Orkney, where they’ve been making whisky since 1798 and still turn some of their own malt by hand on traditional floor maltings. The magic ingredient is the peat: cut from heather-rich Hobbister Moor, it burns floral and aromatic — a world away from the medicinal punch of Islay. Wrap that gentle smoke in eighteen years of first-fill sherry-seasoned oak from both sides of the Atlantic and you get a dram that’s rich without ever being heavy.
Orange peel, dried fruit and heather honey on the nose, with soft toffee and warming spice underneath. The palate delivers honeyed sweetness, dark cherries, a hint of chocolate and structured oak spice, while that fragrant moorland smoke runs through everything like a fine thread — tying it together rather than taking over.
